Mould 30 is known as a Tommé mould and is a large cylindrical mould with a built-in base. It has an internal diameter of 135mm with a height of 65mm enabling it to produce a relatively 'flat' round cheese of over 1/2kg. It comes with a follower that is manufactured from heavy duty plastic (Dairythene) and is designed to fit snugly inside the mould - it is used to press out the whey when placed in a cheese press.
